Ingredients
  

  • 201 gms Millet Noodles (about 2 cups)
  • 2 cups Assorted Vegetables (e.g.,bell peppers, cucumber, carrots, red cabbage)
  • 1/2 cup Fresh Herbs, chopped (e.g.,cilantro, mint, basil)
  • 1/4 cup Roasted Peanuts, crushed
  • 2 tablespoons Lime Juice
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Honey or Maple Syrup
  • 2 cloves Garlic, minced
  • 1/2 tablespoon Red Chili Flakes (adjust to taste)
  • Salt -To taste

Instructions
 

  • Cook Millet Noodles: Make a big kettle of water up to a simmer.Incorporate the millet noodles. cook in accordance with the instructions on the packet (usually 7 – 9 mins).
  • After cooking, strain the noodles through an strainer. Rinse them in cold water so that they stop the boiling process. Let the noodles cool,then set them aside.
  • Prepare the Dressing: In a small pan mix the Soy sauce, lime juice sesame oil and honey, maple syrup or minced garlic, the red chili powder.
  • Mix the ingredients over the low temperature, stirring it until the mixture is thoroughly combined. Removing from the stove and letting the mixture cool.
  • Chop the Vegetables: As the pasta and dressing are cooling, chop up your assortment of fresh vegetables and herbs into small pieces.
  • Assemble the Salad: In large mixing bowls make a mixture of the millet noodles with chopped vegetables and fresh herb.
  • Add the Dressing: Sprinkle the chilled dressing on the salad. Toss it together until it's fully covered.
