Millet Pulao Recipe (kodo Millet )

- 1 Cup Kodo-Millets
- 1 Cup Mixed Vegetables (carrot, beans, green peas and capsicum)
- 1 tbsp Ghee or oil
- 1 tbsp Bay Leaves
- 1 tbsp Cumin(jeera) seeds
- 1 Cup Onion
- 1/2 tbsp Turmeric powder
- 1/2 tbsp Garam masala powder
- 1/4 tbsp Salt
- 1 Cup Water
- 1/2 tbsp Lemon Juice
- 1 tbsp Ginger, Garlic, Green chilies,
- 1/4 Cup Mint (pudina)
- 1/4 Cup coriander leaves (cilantro)
- 1 tbsp Cardamom, Cardamom

Take all the ingredients listed under & quot, for the paste & quot; into amixer grinder and blend to a smooth paste.

Heat a pressure cooker. Add oil or ghee and once it & 39s hot, add the bay leaves, jeera, saute for 30 secs till jeera splutters.

Thenadd sliced onions and saute for 2-3 minutes until they turn soft and lightbrown–stir regularly.

Next, add ground mint coriander paste and sauté for 2-3 minutes until the raw smell disappears.

Add mixed vegetables and cook for a minute.

Then add rinsed millet, turmeric powder, garam masala powder, salt, and water and mix everything well. Adjust seasoning at this stage.

Close the lid place a whistle and cook for 2 whistles on medium flame.

After pressure has release naturally fluff up the millet gently. Squeeze some lime juice and garnish with cilantro (coriander leaves).
