Foxtail Millet Laddu, a delicious and nutritious Indian dessert made with foxtail millets flour. This is a healthy alternative to the traditional Indian sweet laddu. It is also low in sugar and gluten free.
Dry roast the millet flour in a heavy pan on a low flame for 6-7 minutes until the fragrant. Set aside on a plate to cool.* In the same pan, dry roast peanuts.* Heat the jaggery in a pan along with water. Let the jaggery melt. Set aside.* Grind the roasted peanuts along with cardamoms and pulse couple of times so the peanuts are powdered.* Empty the mixture on a plate. Add the roasted millet flour. Add in half of the melted jaggery. Keep adding melted jaggery little by little. Add as much is required to bring the mixture together.*Shape into ladoos of desired size.*Ready to serve.
